Just Almonds Review, Ginger Snap Almond Cookies.

Fun fact about almonds; An almond is not really a nut, it is a drupe. which is technically a fruit. Did you know that? I didn't! If you want to learn more about Almonds visit Just Almonds.

Just Almonds gave me a chance to do a review in exchange for product, I received Almonds & Just Almond Flour. I combined both, and made COOKIES! If you've been following my blogs, you will notice that I love to cook. I have ate Almond products before from Andersons, and Wholefoods, but I had never tried to make cookies myself. Making them yourself is by far less expensive. I baked some cookies for my moms group, I'm always trying to find better, healthier snack alternatives. The cookies were pretty simple, and easy to make. I loved the texture of the Almond Flour. Also it's nice to know that they are grown, and packaged here in the U.S.A. If you are a gluten free, natural family, I advice you to check Almond Flour out.



I felt as if I accomplished something by baking almond cookies. In my honest, opinion, I believe almonds are a rich source of vitamin E, calcium, phosphorous, iron and magnesium. It also contains zinc, selenium, copper and niacin. Almonds are good for your brain, heart, & skin. You can use almonds to regulate blood pressure, and cholesterol. You can help prevent certain cancers like colon, almonds help to improve the movement through the colon. Diabetics can eat almonds to help control the rise in sugar and insulin levels after meals. Unsweetened almond milk can help reduce weight by mono-saturated fat that is in almonds by satisfying appetite, and prevents over-eating. Also, because almonds are rich in fiber, and full of folic acids, they are ideal to eat during pregnancy to help with constipation. And, a boost of energy.



The Cookies turned out wonderful. The aroma of the spices from the oven made me want to mix up more batches. What else I loved about this recipe with the almond flour was, you didn't have to use your mixer. Just mixing by hand, and rolling the almond flour into balls was fairly simple after the wet ingredients were added. Using the beefree honey made it less sticky, and didn't stick to my hands much.



I thought it looked pretty, all the different colored spices over top the almond flour.



Below is the recipe if you'd like to try to make some yourself. Just Almond sells Almond Flour, Almond Meal, & Almonds by bulk as well.



How To Make The Cookies!

Preheat oven to 275 degrees

Blend all the dry ingredients together

Add the honey and butter to the dry ingredients, and blend well

Create small balls of dough, place about an inch apart

Flatten each cookie with a fork, flatten it one way with the fork, then the other way so it makes a cross over pattern

Sprinkle Cinnamon Sugar over each cookie

Add a whole almond to the middle of the cookie

Bake for 15 minutes

Lower the oven to 175, flip the cookies over, and bake for another 15 mins

You know me, I hope I have made you all hungry! Drooling, Vying for the taste of a ginger snap almond cookie on your tongue, & wanting to experiment using Almond Products. This was a delicious review, and yes I ate my cookies warm.

Super easy pizza! Using Daiya Mozzarella Style Shreds, and Gluten Free Pizza Crust.  

The cheese is Dairy, Lactose, Casein, Gluten, Soy, and Cholesterol Free.  It doe's melt, and stretch like regular cheese.  It tastes like fresh grated, mozz cheese that was just melted.  I also like the fact that Daiya is 100% preservative free.  

My favorite pizza toppings are: Turkey Bacon, Black Olives, and Red Onions.   

Verdict on Daiya Cheese:  Total Success, equals a happy family.  Everyone enjoyed their slices of Pizza, and I still have enough in the bag to make this meal again.

I had the chance to ask Ashleen from Daiya Foods what her favorites were; She is a fan of the Cream Cheese, and Jalapeno Garlic Harvarti Style Wedge.

The No Bake Cheesecake, using Daiya Cream Cheese, What I like about this recipe is, most of the ingrediants are things we already have in our kitchen.  You can find the receipe for Dairy Free Cheesecake by going to Daiya Foods online.

Another Favorite of her's was the jalapeno garlic Havarti style wedge.  We absolutely love spicy foods, and I am looking forward to trying the Wedges.  I have some tips! Straight from insiders source about the Cheese "is that less is more. You don’t really need as much as you would use dairy cheese so start out with small amounts if using Daiya on a pizza or quesadilla."  

unfortunately my Local Grocer did not have a vast line up of products so I had to request them at Customer Service. Keep in mind, if your store doesn't carry something.. always Request the Product!  Most major chains will want the product, because they want your buisness.

Spoiler Alert! Tonights #BiggestLoser Episode @MyTrainerBob recipes to @SwitchToTurkey

Jennie-O Extra Lean Turkey Breast is my Favorite.
We are a huge fan of Jennie-O turkey! From the Turkey Hams (Great value for the price, makes a few meals.) to the Turkey Bacon that even my picky 3 year old Enjoys!! I'm not surprised to see them on the biggest loser at all. Bob is my favorite trainer! Tune in tonight to see what Bob has to say at 8/7c on NBC. That is 8-9PM Eastern for me.

Easy Stuffed Gluten Free Chicken Breast Recipe! Check it out! Plated with Raw baby leaf spinach, and spaghetti squash.


for 4 large boneless chicken breasts you will need,

4 large boneless chicken Breast
1 pack of Neufchâtel Lite Cream Cheese
1 pack of Uncured Apple Wood Bacon
Green Onions


Step 1, Start to cook your bacon.  
Step 2, Half cook all but a few slices of bacon 
(The all the way crispy pieces are for the Cream Cheese Stuffing.)
Step 3, Set aside the half cooked bacon 
(You use these to wrap the chicken with later, so do not cook them all the way.)

Preparing the Cream Cheese Stuffing,

Step 4, Dump the Cream Cheese into a bowl,
Step 5, Cut some Fresh Green Onions Up (I use cooking scissors for everything like this.)
Step 6, Take some all the way Bacon you cooked first, and cut into little pieces, and add to the bowl too
Step 7, Add some salt, pepper

Preheat Oven to 375,

Preparing the Chicken

Step 8, Add some salt, pepper, and a little bacon grease into a glass baking pan
(This is what the Chicken will be baking in.)
Step 9, Make sure your tooth picks are out and reachable without having to stop, and wash your hands.
Step 10, Take thawed Chicken Breast and flatten between Wax Paper starting from the center out with the flat side of a meat mallet. 
Step 11, Take the flatten chicken breast, and rub both sides into the salt, and pepper in the glass bowl, then place  it breast side down.

Stuffing the Chicken

Step 12, Split the Cream Cheese Stuffing up between all four breasts, right in the center of the flat breast.
Step 13, Hold the chicken breast together, and wrap a piece of bacon around it with a tooth pick. Add as much bacon as you want, and as many tooth picks as you want.  I like to over stuff, so I used a few at the end and folded the chicken in to make like an envelop.

Cooking the Chicken,

Step 14, Oven should've already been preheated to 375.  Bake at 375 for 30 Minutes.
Step 14, After 30 minutes, Broil it for 5 minutes.



I plated mine with Fresh, raw baby leaf spinach.  And a side of Spaghetti Squash.



It's so delicious, and easy to make.  I think next time I'm going to buy more uncured apple wood bacon (My 3 year old loves that stuff, so I had to keep cooking it for him, lol.) So next time I am going to get 2 things of Cream cheese, 2 things of bacon (I get the thick cut.) to make 8 Stuffed Breasts.

Apple Bread using Rice Flour.


Preheat Oven to 350F,

3 Granny Smith apples
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons lemon juice

How to make the Bread:

2 1/2 cups Rice flour
1 cup granulated sugar
1 tablespoon instant yeast
3/4 teaspoon salt
1 cup warm water
2 1/4 teaspoons coconut oil

First take the apples, peel and core them.  Cut into thin slices.  Add Sugar, Cinnamon, and Lemon Juice. Bake in a glass dish for 15mins.

While the Apples bake,
Start your bread.  If you are wheat free, check out Rice Flour.

Mix the Rice Flour, Sugar ( I like mine sweet, so I use a full cup of sugar. Use Stevia, or whatever else you like to substitute.) Instant Year, salt, warm water, and I like to melt coconut oil, and mix into the bread mix.

Kneed into a ball, and work it into a thin sheet onto parchment paper.

I use parchment paper that way it's easy to bake.

Take your apple filling that should be cooling off by now, and add to the center of your flattened bread.  Fold the sides over.  And cut slices onto the top.  It doesn't have to be perfect, just slice where ever!

Bake on 350 for 20 minutes.

Mix melted butter, cinnamon, and sugar.  And rub on top the baked bread.

Put back in the oven to brown some more.

Bake for another 5 minutes.


Easy Gluten Free Meal, Spaghetti Squash!

Today my hubby made an Easy Spaghetti Squash Recipe for dinner,


Preheat Oven to 375 F, 

Preparing the Squash is as easy as cutting the Squash in half (It looks like an oversized Squash) Cut the tips first, then cut it in half using the rock back and forth method.  It also cooks quicker this time then whole.

You take the seeds, and pulp out.  You can also bake the seeds, and eat those if you want.  We didn't this time.

Before baking, add a little salt, garlic, pepper, and coconut oil, the flip it so it's Rind Side up to bake.

Bake for 35 minutes. 

When done baking, just take a fork, and scrap the insides out in a down ward movement.  It comes out looking like Spaghetti.

Other ways to cook:

Bake rind side up about 30 to 40 minutes at 375 F.
Microwave 6 to 8 minutes (let stand for a few minutes afterwards)
Boil 20 minutes or so.

Add whatever toppings,  We did a tomato, Tuscan veggy mix ontop.



Try it! Even just the Spaghetti Squash with salt, pepper, and butter tastes delicious on its own.

Pompeain 100% Grapeseed Oil All-Natural Cooking Spray #Review, and #Coupons

Smiley360 sent me Pompeain Spray to review.  What makes this spray in my opinion better than the others, is the fact it is 100% Grapeseed Oil.  The spray nozzle on the bottle itself makes the spray coat more surface area than other sprays.

I used mine to coat a pan for Sweet Potato Casserole,

3 cups mashed sweet potatoes
1 cup brown sugar
2 eggs, lightly beaten
1 teaspoon vanilla
1/2 cup milk
1/2 cup melted butter


Top With,
1/2 cup brown sugar
1/3 cup flour
1/3 cup melted butter


Preparation:

Combine the mixed mashed sweet potatoes, brown sugar, eggs, vanilla, milk, and melted butter into the casserole dish. Once that is ready, you then mix the Brown Sugar, flour, and melted butter in a different bowl and pour that as the topping of your casserole dish.

Bake on 350 for 30mins, or until you think its Brown enough.

Quick & Easy Candied Sweet Potatoes

Preparation and Cooking Time:
30 minutes


Ingredients 1 can (29 oz) Princella or Sugary Sam Cut Sweet Potatoes
5 Tablespoons butter or margarine
1/3 cup brown sugar
1/3 cup chopped pecans (optional)
1 cup miniature marshmallows (optional)

Directions

Pour sweet potatoes with liquid into 2-qt. saucepan; cook until heated through. Drain liquid. While sweet potatoes are heating, combine butter or margarine and brown sugar in 1-qt. saucepan and cook until hot but not boiling. Add nuts to sauce, if desired, and pour over hot sweet potatoes. Stir just to coat. Serve immediately. One cup miniature marshmallows may be added on top of dish just before serving and placed under the oven broiler until golden brown.

A perfect side dish for your Thanksgiving and Christmas holiday dinners!

Italian Green Bean Casserole

Preparation and Cooking Time:
45 minutes

Ingredients
1 10.75 oz. can Condensed cream of mushroom soup (low fat or fat free can be used)
1/2 cup Milk
1 1/2 tsp. Soy sauce
Pepper to taste
2 14.5 oz. cans Allens Cut Italian Green Beans
1 1/3 cups French fried onions, divided

Directions
Preheat oven to 350°F. In a 1 1/2-quart casserole, mix together soup, milk, soy sauce, pepper, Italian green beans and 2/3 cup onions. Bake for 25 minutes, or until heated through. Stir, then sprinkle remaining onions on top. Bake 5 to 10 minutes, until onions are golden.

A perfect side dish for your Thanksgiving and Christmas holiday dinners!

Werthers Original Mommy Party, with Gluten Free Caramel Cheesecake Bites Easy Recipe. #WerthersBakingBash


I wanted to do a fun, and easy recipe for my Werthers Original Baking Bash Mommy Party! In my Mommy Party kit I received bags of the New Werthers Original Baking Caramels.  I decided to make Mini Caramel Cheese Cake bites.  The bites were a huge success among Adults, and Children.  I gave bags away as Door prizes too.

I try to think outside the box when it comes to snacks like this. My husband is Wheat Free, and I found delicious GF Graham Crackers.

I am a huge believer in life does not have to be complicated.  Parties should not be complicated.  The food served at my parties are always delicious, and my friends thought I was kidding when I told them how easy Werthers Original Baking Caramels were to use, and even more blown away that this had absolutely no wheat in it either.


Honestly, All I did for this Recipe was,

Crunched up Gluten Free Graham Crackers,
Added Butter, and Cinnamon Sugar to the Crust Mix.
Packed down the Crust Mix into the Mini Cupcake wrappers.

Baked on 350 for a few minutes.


Purchased Cheesecake filling (Yes, like I said EASY.)
Packed cheese cake filling into the Cupcake wrappers overtop the Crust.

It's starting to look like mini cheesecakes by now.
Baked in the oven again for a few minutes on 350.

I found it convenient that once they cooled off some, they made their own indent.

This is the fun part,  The melting of the Werthers Original.  Once, again, I used the microwave. Aint' no shame in my Lazy game.  Once the Caramel was melted (It melts super fast.) I used a spoon, and just made a dot of caramel in the middle of the bite.

To set the Bites up, I placed them in the Fridge, and this is the finished product.  Seriously, everyone at the party thought I had bought them.  The baking pan I have, makes 24 mini's.  I know some people are all, I would've made the cheesecake filling from scratch, blah, blah, blah blahgaedy, blah, but you know what? They were still good, and I really don't care! I'm no Rachel Ray, and I have no time to stand pretty in the kitchen. 



Everyone was happy, happy.

Easy smash cake recipes, perfectly-sized for baby to dig right in!

I'm a first time mom, and had no idea what Smash Cakes were, or why they were needed.  Now I know how easy it is to make your own cakes, and even decorate them without spending too much time on them. Betty Crocker shows how easy it is to create these Smash Cakes in an easy step by step on pinterest!

I am learning that it does not matter how much you spend on the birthday parties, or the cakes.  It's the love, and enjoyment in celebrating.  The smash cakes makes it fun for the little ones to get involved, and a lot messy.  I think its a great way to step back, and let a little kid, be a little kid.  


Sy's first birthday was easy,  We had it somewhere that the whole family could have fun at, and he was allowed to run around too (Sy had been walking/running since 9 months old!) I didn't care to spend a ton of money on decorations, or cakes.  I did make my own Fondant Figure for his cake.  I do believe birthday parties for little kids really don't have to be as hard as some parents stress over.  It's a party!! Long as the cake is delicious, the company is fun.. It will be a hit.

Pompeian Extra Virgin Olive Oil Review, Easy Crab Cake Recipe with Steamed Veggies.

My Pompeian Extra Virgin Olive Oil Review through Smiley360., and Super easy Crab Cakes with Steamed Veggies Recipe.


When I'm in the mood to cook, and have ingredients that I love to eat.. I totally cook with love.  I received a $10.00 Walmart Giftcard, and Bottle of Pompeian Extra Virgin Olive Oil to try, and review through Smiley360 Blogger Circle.  I had to make up a recipe, and incorporate the Oil into it, while also using my $10.00 Giftcard for ingredients.

I already had the seasoning, eggs, and red onions.  So I splurged and bought the Broccoli heads $2/2, and the Baby Bella Mushrooms $1.50.  The rest of the money I used to buy Blue Crab meat in the Refrigerated section near the Fresh Seafood, and Cut Meat.



Ingredients:
  •  (2 heads) Broccolli
  • 1 package of Baby Bella Mushrooms
  • (2 medium sized) Red Onions
  • Pompeian Extra Virgin Olive Oil
  • (2) Large Eggs
  • Italian Bread Crumbs
  • Old Bay
  • Pepper
  • True Lemon Powder
  • Garlic Powder
  • Soy Sauce
  • 2 Non-Stick Frying Pans
  1. First Wash, and prepare your Veggies.  Doesn't really matter, just cut them to your liking. Set aside til you are ready to steam. 
  2. You'll need to add 2 tsp of Italian Bread Crumbs ( I don't add a lot of breading.) 1/2 tsp of Old Bay, 1/2 tsp Garlic Powder, 1/2 tsp Pepper, 1/2 tsp Garlic Powder to the bowl you'll be adding the Crab Meat to.
  3. Open the Crab, and break the already picked pieces into the bowl with the dried herbs.  
  4. Crack the 2 eggs into the bowl with the Crabs, and dried herbs.  
  5. Work the Crab into patties.  (I make the patties, and sit mine onto parchment paper while the frying pan gets ready.) The best way I can explain on how to make the perfect crab cake is, you know how when you roll clay into a ball into your hands? Work the Crab meat like that. Once its a ball, press it between your hands just enough to give it a flat patty shape.  If it's too wet, add more bread crumbs, if it's too dry, add more egg.
  6. Coat your pan with Pompeian Extra Virgin Olive Oil. It's pretty thick (Which is GREAT.) so I take a paper towel and coat the pan all the way around before it becomes too hot. Don't be scared to use a lot of Olive Oil.  It doesn't over power the food, and fries up nicely.  So coat it like you want something fried.
  7. Take your freshly made patties, and ONLY put them in the pan when the pan is Hot, if you put them in the pan while the oil is still cold.. what's the point in frying? It turns food soggy.  So let the pan heat up some. 
  8. Let the Patties fry for a few minutes(goto step 9. but come back here in a few minutes.) in a 2nd pan while this fries.) before checking with a spatula to see if anything is sticking, just slide the spatula under the patty, move the patty some ( My pans awesome, I usually just have to shake the pan.) While still on high, flip the patties over to the other side, and let that side fry on high for a few minutes too.  You can drop the heat down to Medium after that.
  9. While the patties are frying, start your veggies.  Coat the pan with Olive Oil, Pour the Fresh Veggies in, I also like to add just a little bit of water so the veggies steam some while in the pan.  Add 2 tsp of the True Lemon Powder, 1/2 Pepper, and As much Soy Sauce as your little heart desires.  I don't cook with salt because for one, The Old Bay has sodium in it that I used for the Patties, and the Soy Sauce I use is Low Sodium.  


I was very pleased with how the Oil fried, and the food tasted.

Super Easy Pumpkin Whoopie Spice Cookies


  • Box Of Spice Cake
  • 16oz can of 100% Pure Pumpkin
  • 3 Eggs
  • Oil
  • Cinnamon
  • Nutmeg

I made these the other day. What I like about these cookies are, they are super easy to make, and my 2 year old absolutely adored them. I saw some recipes just call for a can of Pumpkin, and 1 cake mix, no other ingredients, but I used 3 eggs, and oil, can of pumpkin, Instead of water, use the pumpkin, I added a little more sugar, nutmeg, and cinnamon too.

I Spooned 6 drops spaced across the baking sheet, and baked for 8 mins. My lil one went Gaga over these. The consistancy of the Pumpkin cookies remind me of whoopie pies. After tasting them, I really wished I had the ingredients to make a Pumpkin Cream Cheese filling to put between two of the cookies.

Preheat Oven to 350, Bake Each Half Dozen for 8-10 minutes.



I also added some reeces pieces, Those were my hubbys favorite, tho my 2 year old liked the plain pumpkin cookies the most.

Recently I tried the Pulse Roasted Chickpeas Variety 4 pack.
Since the Chickpeas are roasted, there is this earthy, full of taste crunch to them.  They aren't hard to bite like you normally get from overly dehydrated snacks.  I really enjoyed that they were roasted instead.  All of the flavors were great, but the Spicy Lemon Zest was my absolute favorite of the Variety Pack.  I usually like spicy, or sweet (Or combined.)

Cooking with Chickpeas.

I wanted to mention that these roasted Chickpeas are great to add to rice with dried onions & dried garlics in a Rice Maker.  The rice absorbs the Roasted Chickpea taste, and becomes soft.

We add Chickpeas to just about everything.  Even Mac & Cheese to trick the little ones. Pulse left the Mac & Cheese with a delicious Sea Salt & Garlic Taste.  The Chickpeas do soften up some, I don't add them til I am putting the butter, and cheddar slices in the noodles to melt after the noodles have already been drained.

Pulse makes it more convenient to add the extra fiber, and protein to snack time, and meals.

My Island Crab Salad Recipe using King's Hawaiian Sweet Rolls.


I love King's Hawaiian Sweet Rolls!! Not only am I a huge fan of the rolls, but my 2 year old enjoys them too.  They are the perfect small hand's meal.

Today we made an easy meal I call Island Crab Salad,

The ingrediants are simple,

I chopped up about 16 oz's (2 packages of Imitation Crab Meat,
1/2 Red Onion,
3 Celery Stalks,



and, my favorite part of this recipe,
The Whole Pinepple, Cored, and Chopped into Smaller Cubes.

Add the Imitation Crab, Celery, and Red Onions into a bowl,  Along with about 1/2 Cup Of Real Mayo, Some Salt & Pepper.  And then the Pineapple cubes.  


I like mine a little sweet, so I add some of the pineapples juice to the island crab salad too.

Easiest way to serve on the Dinner rolls would be to use an IceCream scooper, and it makes the Serving Size perfect for the rolls.

Marylander, through, and through!


We have been on a Crab Cake kick lately.  Our local Giant Eagle has had the blue crab on sale for $9.99 (That's almost half it's price for a 16oz of the Lump White Meat.)  My husband loves my crab cakes.

I grew up in Maryland, and now living in Ohio makes me miss the Seafood houses back home.  I do beg family members to get bushels of blue crabs to steam with Old Bay when I go to visit.  I don't like my crab cakes with a lot of breading.  To me, that is not a Maryland Crab Cake.  

For these crab cakes,  I add the blue crab meat into a bowl,  dried onions, garlic powder, dried parsley, dried oregano,  OLD BAY! (there is no exception.) yellow mustard, egg whites, and just a little almond flour since my husband doesn't eat any wheat products.  The almond flour gives it a more earthy, nut taste.  If you eat crabs, you would know the yellow mustard tastes like the female crabs.  I personally love that about female crabs.

I like to make a game out of how big I can make the crab cake.

Fat Free Fettucini With Zero Calorie Noodles.


Tonight for dinner I made Fat Free Fettucini With Zero Calorie Noodles.  The noodles I used are by Skinny Dip. They are calorie free, carb free, and soy free.  So basically.. everything that is awesome!  The texture of the noodles are still like noodles..  I used two bags in my fettucini.  This is a recipe I made up on the spot that turned out delicious.

I sprayed the pan with a little buttery Emerils cooking spray.

Added,

Two bags of Skinny Dip Noodles,
Dried Onions 3tsp,
Garlic Seasoning 2tsp,
1/2 cup of Spinach Dip that is fat free because it is made with Greek Yogurt.
1/4 cup of Fat Free Milk, low heat simmered.
1/2 cup of Fat Free Mozz Natural Shredded Cheese. (Or whatever amount you like! I like to eye ball things.)

Then when it's almost done,

Added Fresh Leaf Baby Spinach, Stirred, let set for a little, and stirred again.

 It really tastes delicious.  It's tricking me into thinking it's regular pasta.



I also did a few home made crab cakes with just egg whites, chopped up red onions, garlic seasoning, old bay, parsley, marjoram and almond flour (barely any flour, I like my cakes to be mostly crab.)

Hubby is loving that I am cooking again.   Maybe he will clean the mess I made in the kitchen??
