Teal Pumpkin Friendly Candy that tastes Good! @YumEarth


Whose ready for HALLOWEEN CANDY!? I know I am, I mean.. my kids and his classmates are! Sharing the food I make, helps me stay on this Journey #GlutenFree #LowCarb #Keto #Lifestyle

Ive changed how I view, and consume the foods that enter my body. It's been a little over 3 weeks since I've been completely gluten free, and only carbs I mainly consume are in certain vegetables, and the occasional rice, green banana flour, and rice flour. I am down 20 Lbs, and I eat all the time. I don't count calories, I just make sure I get a healthy serving of fat, protein, and vegetables for healthier net carbs. What's helping me continue on this diet is sharing my food on Instagram, and on here. It's a motivational tool for myself. I also take B Complex, Womens Multi-Vitamins, and Cod Liver Oil, along with checking my ketones with Ketone Sticks.

I also like Salads with Feta, Olives, and Everythinggggggggg.  I do mix it up, sometimes I do Guac Salad, or Vingerette for a dressing.  Meat wise, I'd rather have shrimp, but I was craving some Bratwurst too. Since my breakfast was pretty light, I had the bratwurst to go with my Shrimp and Greens Salad.

Gluten Free Mozzarella Sticks using Green Banana Flour #GlutenFree #Recipe #Spon



I wanted to try Let's Do.. Organics Green Banana Flour since I started on this journey to eat healthier foods.  What connected me with this flour was it's naturally gluten free, extremely low carb, and has a fluffier consistency than regular flour.  I decided to make Gluten Free, Low Carb Mozzerella Sticks.

What's for Dinner? Easy Gluten Free Cheesesteak Subs Recipe #Making #Cheesesteaks without the breading #Shrooms #Onions #Mushrooms #GreenPeppers #tomatoes #Provolone #Steakums #GlutenFree

Pack of Steak-umms
2 Green Peppers
Swiss Cheese Slices
Provolone Cheese Slices
Lettuce
Baby Leaf Spinach
Tomatoes
Cilantro
Onion

Preheat the oven to 250.




Fry the steak-umms, leave them whole sheets except the last one, Don't cook that one til you are sauteing the peppers, and onions.

Pat excess grease off, and roll a half slice of each cheese into the middle of the steak um, and place into baking pan. Repeat til all the Steak-umms are rolled up.




Pan fry Green Peppers, Onions and whatever steak-umm did not make it whole.. along with the one you saved haha. Add this ontop of the steak umms for baking. Put in the Pre-heated oven til melted. About 20 mins.




Cut up the Lettuce, and Spinach, and Cilantro together. Thin Slice the Tomatoes. Use these for Toppings when the Meat, and cooked vegetables are out of the oven & Enjoy!

What's for Dinner? Gluten Free Eggplant Parm Extremely Low Carb #Fried #Eggplant #PorkRind #Breading #Garlic #Powder #Salt #Pepper #Foodie #Love #GuessWhoseMakingEggplant #Parmesan




I absolutely love Pastas, and this was a great substitute for it. I breaded the eggplant with Crushed Pork Rinds ( The pork rinds have enough salt, so I didnt add any salt in with the other seasonings,) added Garlic Powder, Pepper, and Italian Seasoning to the Pork Rind Mix before dipping the Eggplant slices into Egg, and then into the Rind Mix, I did this just once, but it was easy to pack onto. Also having a pan of Olive Oil just 1/2 thick, and already warm/hot is Key to frying these up, and keeping the Mixture on for an evenly brown. I did a layer of Egg plant, a layer of ground meat, sauce, layer of eggplant, layer of black olives, and a layer of Cheese. It's one of my favorite meals.

KitchenSpec Batter Cake Pen Dispenser with 2 Round Pancake/Egg Rings Review #GlutenFree #Pancakes #Spon

Oh you know, just making Pancakes, and using a cake pen Dispenser.



I actually had fun with this review. I puree'd blueberries to dye the gluten free pancake mix. I poured the regular mix in one Squeeze Container, then added the blueberries to the second to make it a 2 toned design. I also liked that each squeeze container holds 3 cups of pancake mix. The rings are 3.5" round.  This was my first time ever using anything like this, and it wasn't hard at all. I liked it. My favorite was the swirl design I did that looked like a Rose.


The two tone colors I did with the Squeeze Bottles were just enough to see the difference of Colors. I also liked how easy the Silicone Pancake ring made it for me to make the perfect little individual pancake. The left over pancake mix I put the caps back on the bottles, and put in the fridge to use tomorrow morning. I liked how easy clean up was for the Silicone Rings.

Sriracha Almond Stuffed Peppers #Recipe @BlueDiamond #Ad

I like my food on the spicy side.  I am always adding Sriracha to  rice, meats, soups, seriously, almost everything.  I can't lie, I was excited to try the new Sriracha Almonds. 

The Blue Diamond Almonds, Bold Sriracha were full of flavors, savory, and spicy.  I decided to use them a few ways while making Sriracha Almond Stuffed Peppers.  


Ingredients,
Blue Diamond Almonds BOLD SRIRACHA
Hot Sausage 12 oz
3 Medium Green Peppers
Red Onion
Roasted Tomatoes
Jalapeno/Habanero Shredded  Monterey Jack Cheese
Long Rice
Salt
Pepper
Dried Garlic 
Dried Chile Peppers

First I had fun using my nutribullet to shred the Sriracha Almonds into a course powder.  It doesn't have to be perfect, I wanted some of the bigger pieces for on top the Cheese, and I wanted the smaller pieces for when I fried the Sausage/Peppers/Onions together.  



Prepped the Green peppers, cut off the tops, deseeded, and boiled my Green Peppers in water for a few minutes, just enough to cook through a little,  Drained the water, and put the peppers in a baking dish.



(put on my Long Grain rice in my rice maker,  its 3 cups of Long grain, and 6 cups of water, added dried chile peppers, dried garlic, salt, and pepper. Make the rice however you want,)  



Fried the Sausage (Drained twice. I use HOT Breakfast Sausage, and dont like a lot of grease.) I then refried the Sausage with the cut up green pepper from the top, cubed red onions, and then some of the course Blue Diamond Sriracha Almonds.  Let me tell you, it smelled amazing together.

Preheat Oven to 450

The Rice should be done now,  I then add the rice to the Almond/Sausage/Pepper/Onion Mix in the pan.  Also add a cup of Fire Roasted Tomatoes.  

Now,  you stuff the Peppers with the Rice Mix.  I also like to add some cheese in the bottom of the Green Pepper before adding the Rice Mix.  When the Pepper is packed, I put it in the Oven to bake for 10 minutes.  Then I add the Cheese on top while baking, and turn the Oven off.  It melts super fast.  



After taking the Peppers out the oven, I sprinkled some of the Blue Diamond Sriracha Almonds on top, and placed a whole almond on the cheese as a treat too.   I think there are so many ways to incorporate Blue Diamond Almonds into a meal.

BK Creamery Blueberries & Cream Waffles #Recipe #GlutenFree #sp



Recently I went to Giants for a BK Creamery In-Store Event.  I'm one of those people that also love to save money using coupons.  So I was excited to be able to use a ,60 cents off coupon towards Bk Creamery

There are a couple more events this weekend at a few Giants, and Super Shop & Stop, Check here and see if any are in your area for BK Creamery In-Store Event Testing.  I tried Strawberries, and Cream at mine.  I enjoyed just the fruit, and cream so I decided I wanted to do a simple recipe with just a fruit, and cream.  


Breakfast is my favorite part of the day.  I decided to make Blueberries over top of a Gluten Free Waffle.  Easy, delicious, and not costly.  Heres how I like to make BlueBerries & Cream Waffles.

Ingredients
Bring the blueberries to a simmer, and cook until berries break down, about 4 minutes. Let cool a little.

Whisk in a bowl some Blueberry Syrup with BK Creamerys Extra Thick Double Cream.

Toast your Gluten Free Waffle (Or make from Scratch, I just use my favorite brands premade Gluten Free Blueberry Waffles.)

My blueberries were sweet, but if yours are too bitter, try a touch of lemon to get rid of the bitterness.


I am a fan of this cream, and how well it mixes with just a whisk.  It wasn't tangy, and I was dipping blueberries in the cream to eat as a treat.

Hint of Honey Vanilla Fruit Freezy Pops Recipe! @AlmondBreezeUS #Ad

Almond Breeze Almondmilk Hint of Honey Vanilla is something I personally believe every pantry should have in it.  Not only is it shelf stable, it's also delicious in a lot of different recipes.  I wanted to do a fun, and easy recipe that my 4 year old could participate in too.  So we are making Honey Vanilla Fruit Freezy Pops.  They are extremely easy to make, and delicious!




Recipe for Blue Diamond Almond Breeze Hint of Honey Vanilla Fruit Freezy Pops

Ingredients:
1 cup Blue Diamond Almond Breeze Hint of Honey Vanilla Almondmilk.
3 cups frozen fruit (I like using Mixed Fruit with Mangos/Pineapple/and a few Strawberries
1/2 cup of Shredded Coconut
3 packets of Monk Fruit Sugar (we like extra sweetness.)

Directions: Blend 2 Cups of Fruit, 3 packets of Sugar and A Cup Almond Breeze together (I use a Nutribullet.)
Cut into smaller chunks the remaining cup of Fruit, Add that, and the 1/2 cup of Shredded Coconut to the Blended Mix. Stir with a spoon, and pour into the Freezer Pop Mold.

Makes 6 Freezer Pops.



Remember to just have fun with it, and enjoy. The Freezy Pops can always be changed to personal preferences. If you like Blueberries, do blueberries and Hint of Honey Vanilla Almond milk too.


There really is no wrong way! Hope your enjoyed! I know my little man had a blast.

Recently I had the opportunity to invite a handful of friends to try out GEFU cooking utensils (www.GEFU.com.)  I loved the Julienne Peelers, Spiral Slicer and Lemon Juicer.  My absolute Favorite Julienne Peeler was the smaller handheld one.


For the main course, I used the Gefu Julienne Peeler on Carrots, Celery, and made Rice Noodles.  Also squeezed Lime over top with the Juicer.  Everything was extremely easy to use.  


It was also fun for the guests to use the Juicer themselves on their plates.  They had never seen anything like it before.

(Cabbage, Cucumber, Red Onions, Mango Rice Vinegar, Salt & Pepper for a Side Slaw Salad to go with the Rice Noodles, and Mini Salmon Patties.)
