4 cups Viki's Granola Maple Cranberry
1¾ sticks unsalted butter (room temperature)
½ cup light brown sugar

¼ teaspoon salt
1 cup all-purpose flour ( I would substitute the all-purpose flour with Rice Flour.)

Directions:

Preheat oven to 375 ˚F'

  • Line two baking sheets with parchment paper or silicone mats
  • Working with a stand up mixer fitted with a paddle attachment, beat the butter at medium speed until smooth, about 2 minutes
  • Add sugar and beat for another 3 minutes
  • Add the egg and salt and beat until well blended
  • Reduce mixer speed to low
  • Add the flour, mixing only until incorporated, then add the granola
  • Make sure to remove any bits of dry ingredients left at the bottom with a rubber spatula
  • Scoop out rounded tablespoon of dough; arrange the mounds on baking sheets leaving 1½ inches of space between them
  • Flatten the mounds lightly with your fingertips
  • Bake 10 to 12 minutes. The cookies should be golden brown but not firm
  • Let them cool for 2 minutes before transferring to a wire rack

Sharing the food I make, helps me stay on this Journey #GlutenFree #LowCarb #Keto #Lifestyle

Ive changed how I view, and consume the foods that enter my body. It's been a little over 3 weeks since I've been completely gluten free, and only carbs I mainly consume are in certain vegetables, and the occasional rice, green banana flour, and rice flour. I am down 20 Lbs, and I eat all the time. I don't count calories, I just make sure I get a healthy serving of fat, protein, and vegetables for healthier net carbs. What's helping me continue on this diet is sharing my food on Instagram, and on here. It's a motivational tool for myself. I also take B Complex, Womens Multi-Vitamins, and Cod Liver Oil, along with checking my ketones with Ketone Sticks.

I also like Salads with Feta, Olives, and Everythinggggggggg.  I do mix it up, sometimes I do Guac Salad, or Vingerette for a dressing.  Meat wise, I'd rather have shrimp, but I was craving some Bratwurst too. Since my breakfast was pretty light, I had the bratwurst to go with my Shrimp and Greens Salad.

Gluten Free Mozzarella Sticks using Green Banana Flour #GlutenFree #Recipe #Spon

I wanted to try Let's Do.. Organics Green Banana Flour since I started on this journey to eat healthier foods.  What connected me with this flour was it's naturally gluten free, extremely low carb, and has a fluffier consistency than regular flour.  I decided to make Gluten Free, Low Carb Mozzerella Sticks. What's for Dinner? Gluten Free Eggplant Parm Extremely Low Carb #Fried #Eggplant #PorkRind #Breading #Garlic #Powder #Salt #Pepper #Foodie #Love #GuessWhoseMakingEggplant #Parmesan

I absolutely love Pastas, and this was a great substitute for it. I breaded the eggplant with Crushed Pork Rinds ( The pork rinds have enough salt, so I didnt add any salt in with the other seasonings,) added Garlic Powder, Pepper, and Italian Seasoning to the Pork Rind Mix before dipping the Eggplant slices into Egg, and then into the Rind Mix, I did this just once, but it was easy to pack onto. Also having a pan of Olive Oil just 1/2 thick, and already warm/hot is Key to frying these up, and keeping the Mixture on for an evenly brown. I did a layer of Egg plant, a layer of ground meat, sauce, layer of eggplant, layer of black olives, and a layer of Cheese. It's one of my favorite meals.

Bake Crunchy Pecan-Banana Coffee Cake Muffins For The Fam! #Recipes #Spon #PostFood

The thing that I love most about this delicious recipe for Crunchy Pecan-Banana Coffee Cake Muffins. is that it can be baked, and then saved for the rest of the week as a quick Breakfast as you're going out the door. Between Work, Kids, and Everything in between, the convenience of meal prepping, and having the meals for the week just makes one less thing to worry about.  To me, it's also better than caving into a Breakfast that isn't full of Healthy Grains, and Nuts. #CreamJustGotReal with @BKCreamery All Natural Extra Thick Cream #InStoreEvent #Ad

I am completely in the zone while in the kitchen. I'm not afraid to try new things, or a twist to some of my already favorite things. Ready to try something new? I know I am!

Like Thick Cream (Here is a .60 cents off Coupon for BK Creamery.) The Brooklyn Creamery has an all New, all Natural Fresh Dairy Cream similar to British Style ‘’Double Cream." The Thickness is similar to sour cream or crème fraîche but without the sour or tangy taste. It is not Ultra Pasteurized like the majority of most heavy creams. I will be attending an In-Store event at the end of the month, scroll down to find details/locations near you.

Photo Courtesy from BKCreamery.com, Check out more Delicious Recipes there.

All Ingredients are Natural: Cream, Carrageenan, Nisin. I can actually pronounce all the ingredients in the Cream. There are no Preservatives! BK Creamery is Gluten Free, Kosher, using rBST Free Milk with No Artificial Ingredients, No Added Salts/Sugars & No Carbs.

The Extra Thick Double Cream is ideal for Cooking, Spooning, and Light whipping.

  • Double Cream can be whipped to make homemade whip cream. Add any type of flavor/sweetener by mixing with cream for just a few minutes. Ex: Crushed Oreos, brown sugar cinnamon, honey, vanilla extract
  • Double Cream can be used to make a homemade spread. Whip double cream into a thick consistency (similar to butter).
  • Leave in refrigerator overnight and enjoy a thick homemade spread. Ex: Vegetable spread, Brown sugar cinnamon spread
  • Dollop onto fresh fruits Strawberries, peaches, blueberries
  • Used in all types of desserts
  • Piping, layering onto cakes
  • Making homemade ice cream & gelato
  • Creating delicate mousses Topping pies and other desserts

While the Extra Thick Single Cream (It's half the fat remember.) is ideal for Cooking, and Spooning.

  • Single Cream can be used to make a homemade coffee creamer – just mix with any flavoring. Ex: Vanilla extract, Peppermint oil
  • Single Cream can make scrambled eggs creamier and thicker.

Great for Dips, Soups, Sauces, Coffee Creamer, Scrambled Eggs, Home made Whip Cream, Piping & Layering on Cakes/Deserts. Even Ice creams, and Gelatos. Or just used as a spread.

Doesn't homemade whip cream with cinnamon & sugar sound amazing? Or maybe you'd rather have shredded oreo cookies, or fresh fruits.

Since The Brooklyn Creamery are the new guys, and we need to stick together for All Natural products you can go visit  an in store sampling event at the following locations from now, til June. I will be going on May 30th, hope to see you there.

Gluten Free GEFU Healthy-N-Lean Review & Tryazon Party! #WheatBelly #GEFU #TRYAZON #Spon #RiceNoodles #Veggies #SalmonMiniCake #Recipes

Disclaimer: This is a sponsored post through Tryazon to throw a party using GEFU.  All opinions are my guests, and my own!

(Rice Noodles, Carrots, Celery, Lime Juice.)

Recently I had the opportunity to invite a handful of friends to try out GEFU cooking utensils (www.GEFU.com.)  I loved the Julienne Peelers, Spiral Slicer and Lemon Juicer.  My absolute Favorite Julienne Peeler was the smaller handheld one.

For the main course, I used the Gefu Julienne Peeler on Carrots, Celery, and made Rice Noodles.  Also squeezed Lime over top with the Juicer.  Everything was extremely easy to use.

It was also fun for the guests to use the Juicer themselves on their plates.  They had never seen anything like it before.

(Cabbage, Cucumber, Red Onions, Mango Rice Vinegar, Salt & Pepper for a Side Slaw Salad to go with the Rice Noodles, and Mini Salmon Patties.)

Everything Used,

GEFU, Spiral Slicer, #13460 (Does 2 Julienne Sizes.)

GEFU, Lemon Juicer, #12485 (Can also do Limes, and Oranges.)

GEFU, Julienne Peeler, #13660 (This one was my Absolute Favorite.)

GEFU, Julienne Slicer, #50410 (Guests Favorite.)

Check out GEFU by going here, www.GEFU.com,

Also made Mini Salmon Patties in Cotton Seed Oil for the Guests.  The Salmon Patties are just Pink Salmon, Egg, Salt, Pepper, and Srircha Sauce fried in the Cotton Seed Oil.

Have fun with it! We all thought these GEFU utensils were amazingly fun, and easy to use. Thank you so much Tryazon, and GEFU for the Party Fun.

Gluten Free Chocolate Covered Cherries and White Chocolate Coconut Square Bites #Recipe using Clif Bars! #gfWalmart #GF #Spon

Disclaimer: I received compensation through Sverve to facilitate a review/recipe.  All opinions, and images are my own.

My family already enjoys Clif Bars, so when I was asked to create a recipe using the Gluten Free Clif bar I was super excited.  Walmart always has a huge variety of Clif bars.  Also they are pretty low cost,  considering they are Gluten Free, up to 9grams+ Protein, and Vitamins for under $1.50 a bar. You'd be surprised at all the Gluten Free Products at Walmart.

I may be addicted to a certain Kitchen Show that you take an already made ingredient, and use it in your recipes.  This is a very easy recipe that I even had my family help turn the  Clif Bars into the chocolate candy bites.

This is how to make Gluten Free Chocolate Covered Cherries, and White Chocolate Coconut Squares using Clif Bars.

Ingredients Needed,
  • Wax Paper
  • Double Boiler (Or use Microwave on 50% Power.)

Cut the Mojo Bar into desired squares. I made my squares a little smaller and wanted to do 10 White Chocolate squares.

Melt the White Chocolate Chips. I used a double boiler, if you dont have one just use the microwave on 50% power for 30 seconds (Don't forget to adjust the Power down or it will burn the chocolate!)

I like the White chocolate to be moldable and not completely melted, and mold it flat on the wax paper. Take a Clif bar square fast, and wrap into the white chocolate like you are making a square present.

Roll the White Chocolate Coated Square into the coconut flakes onto all 4 sides.

Cut the Luna Bar into 4 squares, and then flatten the squares a little thin.

Place a Cherry in the middle of the flattened Luna Bar. Roll into a ball, with the cherry in the middle.

Place on a plate with wax paper.

Melt the Milk Chocolate Chips.

Spoon Chocolate on to the Luna Bar Circles. Repeat until you have your desired thickness of chocolate. I did a few that you could still see an open side of the Chocolate Covered Cherry like it was a mini bowl too.

Go back to the White Chocolate Squares, and pour a little Milk Chocolate if you'd like, and place an Almond on top before it cools.

Refrigerate to help harden the chocolate up, if you want it soft, it's still good!

I already want to make more! I only used 2 Clif Bars, and still have a jar of Cherries ( I love baking these cherries into treats too,) and a lot of chocolate chips left from the Bags I bought. This is a fun no bake alternative. If you want to find more gluten free recipes check out Walmarts Gluten Free in-store event on January 24. I will be going to my Local Participating Store!

Summer Fun with @BlueDiamond Rosemary & Black Pepper Almond Gluten Free Salsa & Burgers, and Berry Almond Shortcake in a Cup #SummerTime #Recipes #Ad

This post is sponsored by Blue Diamond Almonds.

Below are two very easy, and delicious Summer Time recipes for using Almonds.  The first recipe I used Blue Diamond Rosemary & Black Pepper Almonds, Tomatoes, and Peppers from my garden to make a Savory Salsa that is All Natural, and Gluten free.  I used the salsa over top Burgers for a BBQ today. Everyone loved it! Especially my Nephew, and his friends, it was sweet while sneaking in good Protein from the Chopped Almonds. Then for something even sweeter, I made a Berry Almond Shortcake in a Mason Jar Cup, with Blue Diamond Whole Natural Almonds.

Ingredients,

1/2 cup Blue Diamond Rosemary & Black Pepper Almonds
4 Large Ripe Tomatoes
6 Sweet Cherry Tomatoes
2 Sweet Yellow Bell Peppers
1 Sweet Red Bell Pepper
1 cup Red Onions
1 tablespoon Sugar
1 tablespoon Vinegar
1/2 tsp Salt

Directions,

Dice up the Bell Peppers, and take the seeds out.  Throw in a Blender( I don't have a food possessor so I used a regular Blender to prove you don't need a lot of fancy things.), and Chop more (I like mine chunky so I only Chopped for a few seconds.)

Put into a bowl.

Dice up the Large tomatoes.  Throw in a Blender, and Chop more. Use a strainer, and put the bigger chunks into the bowl with the Bell Peppers.

Dice up the Cherry Tomatoes, (Leave a few of the Cherry Tomatoes whole, and just cut into half and throw in the Bowl with the other ingredients if you like Chunky.)

Dice up the Red Onions, and Poblanos or whatever other peppers you like.  I chose not to make this one spicy because I wanted all the kids to enjoy it Throw into the Blender to Chop more.

Throw in the bowl with the rest.

By now the bowl should have the Bell Peppers, Tomatoes, Onions, and Poblanos.

Throw the whole Almonds in the blender, and Finely chop them.

Add them to the bowl with the other ingredients.

Now add the Sugar, Vinegar, Salt,  Mix, and Serve! The Blue Diamond Rosemary & Black Pepper Almonds have a great tasting seasoning added on to the Almonds already that I didn't have to add a lot of seasoning to the Salsa itself.

I do love me some home made recipes, but opted to do a very simple, and easy Berry Almond Shortcake In A Cup Desert Recipe

Ingredients,

Blue Diamond Whole Natural Almonds
Strawberries
Blueberries
Whip
GF Shortcake Cups

Directions,

Chop Blue Diamond Whole Natural Almonds up in the Blender, and layer it between Shortcake, Strawberries, Blueberries, and Whip cream.

The cute County Fair Jar Cups I found at Dollar Tree and fell in love with them.

Gluten Free Fruit Recipes! Win A Nesco Electric Dehydrator & Jerky Maker.

The Nesco/All American Dehydrator is probably one of the easiest appliances I have ever used. If you are a health food guru, or just a beginner, it's all the same. Any one can use this machine.

All I did was open the box, removed the dehydrator, and cleaned the four separate trays off. Next came the fun part, I started to prepare my fruits.

If you have younger kids, or even school aged kids, this dehydrator would make the perfect back to school snacks. Even on the run, and out the door for breakfast. Jerky for protein, and Fruits like apples that's full of fiber would be healthy & filling. Along with blueberries, and strawberries that are full of vitamins they can easily eat with no mess would be ideal too. Any fruit you like, you can dry!

It is also a Jerky Maker, and came with packs of seasoning for that as well. I plan on making chicken, and turkey beef sticks. Maybe even some turkey ones after Thanksgiving with leftovers. Be prepared to see more posts of me creating awesome things with this machine.

I'm using it to make dried snacks for my 19 month old, He refuses to eat "wet" foods, so I get his vitamins in by dried fruits. When dried properly fruits can have a great source of Vitamin A & C, along with the daily fiber for a healthy body.

This is my first time using a dehydrator, so I am just a beginner. I prepared Strawberries, Blueberries, & Fiji Apples. After washing them off. The Strawberries, and Apples(I soaked in water with Cinnamon) were sliced thin. They are not to overlap while on the dehydrator trays. The blueberries I just placed on whole, where ever, I did try to make it look pretty.

I also puree'd blueberries in the blender to make my own blueberry fruit leather. I buy fruit leather all the time, and have never made my own. This is more so for me, than the kids! You don't even have to use sugar in it, the fruit has it's own natural sugar. If the fruits you use are tart, consider using Honey. I love BeeFree Honey (apple honey.) This kit came with a make your own fruit roll up plastic tray with a special no spill over lip.

Over all it takes about 10-12 hours for the fruits I chose.

What is also great about this machine is that the top tells you what temperature to use to dry certain things. There is also a recipe book with easy to follow ideas, like, Orange Julius, Strawberry Cream Cheese, and Pina Colada Fruit Roll Ups.

This was a fun review, If you know how to slice fruit, YOU CAN make your own dried fruit. If you know how to push "puree" on your blender. YOU CAN make your own fruit leather. Don't be afraid to try something new.

My Blueberry Fruit Leather!!!! Turned out great!!!! I used just blueberry puree I made, added a drop of BeeFree Honey (Apple Honey) for extra sweetness. It would've been good without the honey too, but I love things sweet.

My Strawberry Chips!!!!! They dried faster than the rest, but I love them crunchy, so I left them in longer.

My Cinnamon Apple Chips!!!!! The aroma that came off of these while they dehydrated was just beautiful. I like my Apple Chips with the skin on. These are so delicious.

These are the Goodies I dehydrated over night, and woke up too.

The whole blueberries take a little longer, so I've puree'd some strawberries to make strawberry fruit leather with since I have extra trays available again.

I really love the fruit leather. I'm going to make my own Pumpkin Pie leather, Apple pie leather.. Peach cobbler leather.. I seriously, am addicted to the fruit leather.

Interesting Stats about the machine;

The machine itself is 500 watts, top mounted 2,100-rpm fan. That means it dries faster with more power, and you get results in hours, not days.

The patented Converga-Flow action provides even heat distribution, no need to rotate trays. No worries about flavors mixing.

Adjustable thermostat (95F-155F) used for Precision drying for the best quality for perfect fruit, vegetables, herbs, and jerky.
Opaque Vita-Save exterior for exclusive light-blocking in preserving vitamins, and minerals.

Expandable, even tho it comes with 4 trays, This model can operate with 12 trays, and automatically adjusts the pressure itself.

I want to thank Nesco/All American Harvest for such a wonderful, easy to use machine. And, also a bigger thanks for Sponsoring this Review, & Giveaway. Thank you Nesco!!!! I am in love with my dehydrator.

**Receiving the Dehydrator for free from Nesco did not sway my opinion on dried fruit. I have always loved dried fruit, and been curious on how to make my own. Honestly, If It wasn't good, I would have said so. I've had nothing but a positive experience using this machine.
