DIY Cookie Jars with Viki's Cranberry Maple Granola Cookies #Recipe #HolidayGiftGuide #Food #Ideas

Viki's Cranberry Maple Granola Cookies

Ingredients:

4 cups Viki's Granola Maple Cranberry
1¾ sticks unsalted butter (room temperature)
½ cup light brown sugar
¼ cup sugar
1 large egg
¼ teaspoon salt
1 cup all-purpose flour ( I would substitute the all-purpose flour with Rice Flour.)

Directions:

Preheat oven to 375 ˚F'


  • Line two baking sheets with parchment paper or silicone mats
  • Working with a stand up mixer fitted with a paddle attachment, beat the butter at medium speed until smooth, about 2 minutes
  • Add sugar and beat for another 3 minutes
  • Add the egg and salt and beat until well blended
  • Reduce mixer speed to low
  • Add the flour, mixing only until incorporated, then add the granola
  • Make sure to remove any bits of dry ingredients left at the bottom with a rubber spatula
  • Scoop out rounded tablespoon of dough; arrange the mounds on baking sheets leaving 1½ inches of space between them
  • Flatten the mounds lightly with your fingertips
  • Bake 10 to 12 minutes. The cookies should be golden brown but not firm
  • Let them cool for 2 minutes before transferring to a wire rack

Sharing the food I make, helps me stay on this Journey #GlutenFree #LowCarb #Keto #Lifestyle

Ive changed how I view, and consume the foods that enter my body. It's been a little over 3 weeks since I've been completely gluten free, and only carbs I mainly consume are in certain vegetables, and the occasional rice, green banana flour, and rice flour. I am down 20 Lbs, and I eat all the time. I don't count calories, I just make sure I get a healthy serving of fat, protein, and vegetables for healthier net carbs. What's helping me continue on this diet is sharing my food on Instagram, and on here. It's a motivational tool for myself. I also take B Complex, Womens Multi-Vitamins, and Cod Liver Oil, along with checking my ketones with Ketone Sticks.

I also like Salads with Feta, Olives, and Everythinggggggggg.  I do mix it up, sometimes I do Guac Salad, or Vingerette for a dressing.  Meat wise, I'd rather have shrimp, but I was craving some Bratwurst too. Since my breakfast was pretty light, I had the bratwurst to go with my Shrimp and Greens Salad.

I wanted to try Let's Do.. Organics Green Banana Flour since I started on this journey to eat healthier foods.  What connected me with this flour was it's naturally gluten free, extremely low carb, and has a fluffier consistency than regular flour.  I decided to make Gluten Free, Low Carb Mozzerella Sticks.

Pack of Steak-umms
2 Green Peppers
Swiss Cheese Slices
Provolone Cheese Slices
Lettuce
Baby Leaf Spinach
Tomatoes
Cilantro
Onion

Preheat the oven to 250.




Fry the steak-umms, leave them whole sheets except the last one, Don't cook that one til you are sauteing the peppers, and onions.

Pat excess grease off, and roll a half slice of each cheese into the middle of the steak um, and place into baking pan. Repeat til all the Steak-umms are rolled up.




Pan fry Green Peppers, Onions and whatever steak-umm did not make it whole.. along with the one you saved haha. Add this ontop of the steak umms for baking. Put in the Pre-heated oven til melted. About 20 mins.




Cut up the Lettuce, and Spinach, and Cilantro together. Thin Slice the Tomatoes. Use these for Toppings when the Meat, and cooked vegetables are out of the oven & Enjoy!

I absolutely love Pastas, and this was a great substitute for it. I breaded the eggplant with Crushed Pork Rinds ( The pork rinds have enough salt, so I didnt add any salt in with the other seasonings,) added Garlic Powder, Pepper, and Italian Seasoning to the Pork Rind Mix before dipping the Eggplant slices into Egg, and then into the Rind Mix, I did this just once, but it was easy to pack onto. Also having a pan of Olive Oil just 1/2 thick, and already warm/hot is Key to frying these up, and keeping the Mixture on for an evenly brown. I did a layer of Egg plant, a layer of ground meat, sauce, layer of eggplant, layer of black olives, and a layer of Cheese. It's one of my favorite meals.

Bake Crunchy Pecan-Banana Coffee Cake Muffins For The Fam! #Recipes #Spon #PostFood


The thing that I love most about this delicious recipe for Crunchy Pecan-Banana Coffee Cake Muffins. is that it can be baked, and then saved for the rest of the week as a quick Breakfast as you're going out the door. Between Work, Kids, and Everything in between, the convenience of meal prepping, and having the meals for the week just makes one less thing to worry about.  To me, it's also better than caving into a Breakfast that isn't full of Healthy Grains, and Nuts. Great Grains Crunchy Pecan cereal is perfect for this Crunchy Pecan-Banana Coffee Cake Muffins Recipe.

Prep Time: 15 mins,  Total Time: 25 mins, Makes: 12 Muffins

Ingredients

Streusel:

  • 1/3 cup unbleached all purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons canola oil
  • 1 tablespoon pure maple syrup
  • 3/4 cup Great Grains Crunchy Pecan cereal


Batter:


  • 1 1/4 cups unbleached all purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 2 ripe bananas (14 ounces total), peeled
  • 1 cup plain lowfat yogurt
  • 1/3 cup canola oil
  • 1 large egg white
  • 1 1/4 cups Great Grains Crunchy Pecan cereal


Directions for the Streusel:


  1. Preheat the oven to 375°F. Line 12 standard muffin cups with paper liners.
  2. Toss the flour, sugar, cinnamon, and salt in a large bowl to blend.
  3. Stir in the oil and maple syrup. Stir in the cereal. Set the streusel aside.



For the batter:


  1. Whisk the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl to blend.
  2. Using a fork, coarsely mash the bananas in a large bowl.
  3. Stir in the yogurt, oil, and egg white.
  4. Add the dry ingredients to the yogurt mixture and stir just until blended.
  5. Stir in the cereal. The batter will be thick.
  6. Spoon the batter into the prepared cups.
  7. Sprinkle the streusel over, gently pressing it into the top of the batter.
  8. Bake until a tester inserted into the center of the muffins comes out clean, about 25 minutes.
  9. Cool 5 minutes in the pan on a cooling rack.
  10. Remove the muffins from the pan and cool completely on the rack.
  11. The muffins can be made 1 day ahead. Store airtight at room temperature.

Recently I had the opportunity to invite a handful of friends to try out GEFU cooking utensils (www.GEFU.com.)  I loved the Julienne Peelers, Spiral Slicer and Lemon Juicer.  My absolute Favorite Julienne Peeler was the smaller handheld one.


For the main course, I used the Gefu Julienne Peeler on Carrots, Celery, and made Rice Noodles.  Also squeezed Lime over top with the Juicer.  Everything was extremely easy to use.  


It was also fun for the guests to use the Juicer themselves on their plates.  They had never seen anything like it before.

(Cabbage, Cucumber, Red Onions, Mango Rice Vinegar, Salt & Pepper for a Side Slaw Salad to go with the Rice Noodles, and Mini Salmon Patties.)

Gluten Free Chocolate Covered Cherries and White Chocolate Coconut Square Bites #Recipe using Clif Bars! #gfWalmart #GF #Spon

My family already enjoys Clif Bars, so when I was asked to create a recipe using the Gluten Free Clif bar I was super excited.  Walmart always has a huge variety of Clif bars.  Also they are pretty low cost,  considering they are Gluten Free, up to 9grams+ Protein, and Vitamins for under $1.50 a bar. You'd be surprised at all the Gluten Free Products at Walmart.


I may be addicted to a certain Kitchen Show that you take an already made ingredient, and use it in your recipes.  This is a very easy recipe that I even had my family help turn the  Clif Bars into the chocolate candy bites.


This is how to make Gluten Free Chocolate Covered Cherries, and White Chocolate Coconut Squares using Clif Bars.



Ingredients Needed,
  • Wax Paper
  • Double Boiler (Or use Microwave on 50% Power.)



Cut the Mojo Bar into desired squares. I made my squares a little smaller and wanted to do 10 White Chocolate squares.

Melt the White Chocolate Chips. I used a double boiler, if you dont have one just use the microwave on 50% power for 30 seconds (Don't forget to adjust the Power down or it will burn the chocolate!)




I like the White chocolate to be moldable and not completely melted, and mold it flat on the wax paper. Take a Clif bar square fast, and wrap into the white chocolate like you are making a square present.

Roll the White Chocolate Coated Square into the coconut flakes onto all 4 sides.




Cut the Luna Bar into 4 squares, and then flatten the squares a little thin.

Place a Cherry in the middle of the flattened Luna Bar. Roll into a ball, with the cherry in the middle.

Place on a plate with wax paper.

Melt the Milk Chocolate Chips.



Spoon Chocolate on to the Luna Bar Circles. Repeat until you have your desired thickness of chocolate. I did a few that you could still see an open side of the Chocolate Covered Cherry like it was a mini bowl too.

Go back to the White Chocolate Squares, and pour a little Milk Chocolate if you'd like, and place an Almond on top before it cools.

Refrigerate to help harden the chocolate up, if you want it soft, it's still good!


I already want to make more! I only used 2 Clif Bars, and still have a jar of Cherries ( I love baking these cherries into treats too,) and a lot of chocolate chips left from the Bags I bought. Summer Fun with @BlueDiamond Rosemary & Black Pepper Almond Gluten Free Salsa & Burgers, and Berry Almond Shortcake in a Cup #SummerTime #Recipes #Ad

Below are two very easy, and delicious Summer Time recipes for using Almonds.  The first recipe I used Blue Diamond Rosemary & Black Pepper Almonds, Tomatoes, and Peppers from my garden to make a Savory Salsa that is All Natural, and Gluten free.  I used the salsa over top Burgers for a BBQ today. Everyone loved it! Especially my Nephew, and his friends, it was sweet while sneaking in good Protein from the Chopped Almonds. Then for something even sweeter, I made a Berry Almond Shortcake in a Mason Jar Cup, with Blue Diamond Whole Natural Almonds.




Ingredients, 

1/2 cup Blue Diamond Rosemary & Black Pepper Almonds 
4 Large Ripe Tomatoes
6 Sweet Cherry Tomatoes
2 Sweet Yellow Bell Peppers
1 Sweet Red Bell Pepper
1 cup Red Onions
1 tablespoon Sugar
1 tablespoon Vinegar
1/2 tsp Salt

Directions,

Dice up the Bell Peppers, and take the seeds out.  Throw in a Blender( I don't have a food possessor so I used a regular Blender to prove you don't need a lot of fancy things.), and Chop more (I like mine chunky so I only Chopped for a few seconds.)  

Put into a bowl.

Dice up the Large tomatoes.  Throw in a Blender, and Chop more. Use a strainer, and put the bigger chunks into the bowl with the Bell Peppers.

Dice up the Cherry Tomatoes, (Leave a few of the Cherry Tomatoes whole, and just cut into half and throw in the Bowl with the other ingredients if you like Chunky.)

Dice up the Red Onions, and Poblanos or whatever other peppers you like.  I chose not to make this one spicy because I wanted all the kids to enjoy it Throw into the Blender to Chop more.  

Throw in the bowl with the rest.

By now the bowl should have the Bell Peppers, Tomatoes, Onions, and Poblanos.

Throw the whole Almonds in the blender, and Finely chop them.  

Add them to the bowl with the other ingredients.

Now add the Sugar, Vinegar, Salt,  Mix, and Serve! The Blue Diamond Rosemary & Black Pepper Almonds have a great tasting seasoning added on to the Almonds already that I didn't have to add a lot of seasoning to the Salsa itself.


I do love me some home made recipes, but opted to do a very simple, and easy Berry Almond Shortcake In A Cup Desert Recipe


Ingredients,

Blue Diamond Whole Natural Almonds
Strawberries
Blueberries
Whip
GF Shortcake Cups

Directions,

Chop Blue Diamond Whole Natural Almonds up in the Blender, and layer it between Shortcake, Strawberries, Blueberries, and Whip cream.  

The cute County Fair Jar Cups I found at Dollar Tree and fell in love with them.
