Just Almonds Review, Ginger Snap Almond Cookies.

Fun fact about almonds; An almond is not really a nut, it is a drupe. which is technically a fruit. Did you know that? I didn't! If you want to learn more about Almonds visit Just Almonds.

Just Almonds gave me a chance to do a review in exchange for product, I received Almonds & Just Almond Flour. I combined both, and made COOKIES! If you've been following my blogs, you will notice that I love to cook. I have ate Almond products before from Andersons, and Wholefoods, but I had never tried to make cookies myself. Making them yourself is by far less expensive. I baked some cookies for my moms group, I'm always trying to find better, healthier snack alternatives. The cookies were pretty simple, and easy to make. I loved the texture of the Almond Flour. Also it's nice to know that they are grown, and packaged here in the U.S.A. If you are a gluten free, natural family, I advice you to check Almond Flour out.



I felt as if I accomplished something by baking almond cookies. In my honest, opinion, I believe almonds are a rich source of vitamin E, calcium, phosphorous, iron and magnesium. It also contains zinc, selenium, copper and niacin. Almonds are good for your brain, heart, & skin. You can use almonds to regulate blood pressure, and cholesterol. You can help prevent certain cancers like colon, almonds help to improve the movement through the colon. Diabetics can eat almonds to help control the rise in sugar and insulin levels after meals. Unsweetened almond milk can help reduce weight by mono-saturated fat that is in almonds by satisfying appetite, and prevents over-eating. Also, because almonds are rich in fiber, and full of folic acids, they are ideal to eat during pregnancy to help with constipation. And, a boost of energy.



The Cookies turned out wonderful. The aroma of the spices from the oven made me want to mix up more batches. What else I loved about this recipe with the almond flour was, you didn't have to use your mixer. Just mixing by hand, and rolling the almond flour into balls was fairly simple after the wet ingredients were added. Using the beefree honey made it less sticky, and didn't stick to my hands much.



I thought it looked pretty, all the different colored spices over top the almond flour.



Below is the recipe if you'd like to try to make some yourself. Just Almond sells Almond Flour, Almond Meal, & Almonds by bulk as well.



How To Make The Cookies!

Preheat oven to 275 degrees

Blend all the dry ingredients together

Add the honey and butter to the dry ingredients, and blend well

Create small balls of dough, place about an inch apart

Flatten each cookie with a fork, flatten it one way with the fork, then the other way so it makes a cross over pattern

Sprinkle Cinnamon Sugar over each cookie

Add a whole almond to the middle of the cookie

Bake for 15 minutes

Lower the oven to 175, flip the cookies over, and bake for another 15 mins

Easy Stuffed Gluten Free Chicken Breast Recipe! Check it out! Plated with Raw baby leaf spinach, and spaghetti squash.


for 4 large boneless chicken breasts you will need,

4 large boneless chicken Breast
1 pack of Neufchâtel Lite Cream Cheese
1 pack of Uncured Apple Wood Bacon
Green Onions


Step 1, Start to cook your bacon.  
Step 2, Half cook all but a few slices of bacon 
(The all the way crispy pieces are for the Cream Cheese Stuffing.)
Step 3, Set aside the half cooked bacon 
(You use these to wrap the chicken with later, so do not cook them all the way.)

Preparing the Cream Cheese Stuffing,

Step 4, Dump the Cream Cheese into a bowl,
Step 5, Cut some Fresh Green Onions Up (I use cooking scissors for everything like this.)
Step 6, Take some all the way Bacon you cooked first, and cut into little pieces, and add to the bowl too
Step 7, Add some salt, pepper

Preheat Oven to 375,

Preparing the Chicken

Step 8, Add some salt, pepper, and a little bacon grease into a glass baking pan
(This is what the Chicken will be baking in.)
Step 9, Make sure your tooth picks are out and reachable without having to stop, and wash your hands.
Step 10, Take thawed Chicken Breast and flatten between Wax Paper starting from the center out with the flat side of a meat mallet. 
Step 11, Take the flatten chicken breast, and rub both sides into the salt, and pepper in the glass bowl, then place  it breast side down.

Stuffing the Chicken

Step 12, Split the Cream Cheese Stuffing up between all four breasts, right in the center of the flat breast.
Step 13, Hold the chicken breast together, and wrap a piece of bacon around it with a tooth pick. Add as much bacon as you want, and as many tooth picks as you want.  I like to over stuff, so I used a few at the end and folded the chicken in to make like an envelop.

Cooking the Chicken,

Step 14, Oven should've already been preheated to 375.  Bake at 375 for 30 Minutes.
Step 14, After 30 minutes, Broil it for 5 minutes.



I plated mine with Fresh, raw baby leaf spinach.  And a side of Spaghetti Squash.



It's so delicious, and easy to make.  I think next time I'm going to buy more uncured apple wood bacon (My 3 year old loves that stuff, so I had to keep cooking it for him, lol.) So next time I am going to get 2 things of Cream cheese, 2 things of bacon (I get the thick cut.) to make 8 Stuffed Breasts.

Apple Bread using Rice Flour.


Preheat Oven to 350F,

3 Granny Smith apples
3 tablespoons granulated sugar
1 1/2 teaspoons cinnamon
2 teaspoons lemon juice

How to make the Bread:

2 1/2 cups Rice flour
1 cup granulated sugar
1 tablespoon instant yeast
3/4 teaspoon salt
1 cup warm water
2 1/4 teaspoons coconut oil

First take the apples, peel and core them.  Cut into thin slices.  Add Sugar, Cinnamon, and Lemon Juice. Bake in a glass dish for 15mins.

While the Apples bake,
Start your bread.  If you are wheat free, check out Rice Flour.

Mix the Rice Flour, Sugar ( I like mine sweet, so I use a full cup of sugar. Use Stevia, or whatever else you like to substitute.) Instant Year, salt, warm water, and I like to melt coconut oil, and mix into the bread mix.

Kneed into a ball, and work it into a thin sheet onto parchment paper.

I use parchment paper that way it's easy to bake.

Take your apple filling that should be cooling off by now, and add to the center of your flattened bread.  Fold the sides over.  And cut slices onto the top.  It doesn't have to be perfect, just slice where ever!

Bake on 350 for 20 minutes.

Mix melted butter, cinnamon, and sugar.  And rub on top the baked bread.

Put back in the oven to brown some more.

Bake for another 5 minutes.


Easy Gluten Free Meal, Spaghetti Squash!

Today my hubby made an Easy Spaghetti Squash Recipe for dinner,


Preheat Oven to 375 F, 

Preparing the Squash is as easy as cutting the Squash in half (It looks like an oversized Squash) Cut the tips first, then cut it in half using the rock back and forth method.  It also cooks quicker this time then whole.

You take the seeds, and pulp out.  You can also bake the seeds, and eat those if you want.  We didn't this time.

Before baking, add a little salt, garlic, pepper, and coconut oil, the flip it so it's Rind Side up to bake.

Bake for 35 minutes. 

When done baking, just take a fork, and scrap the insides out in a down ward movement.  It comes out looking like Spaghetti.

Other ways to cook:

Bake rind side up about 30 to 40 minutes at 375 F.
Microwave 6 to 8 minutes (let stand for a few minutes afterwards)
Boil 20 minutes or so.

Add whatever toppings,  We did a tomato, Tuscan veggy mix ontop.



Try it! Even just the Spaghetti Squash with salt, pepper, and butter tastes delicious on its own.

I know there's a bazillion ways to prepare leftover Thanksgiving Turkey, and side dishes, but I get sick of eating the same kind of thing, all the time. Plus, I like to spend time with my family, not hours in the kitchen cooking.  

My local Giant Eagle carries Tandoor Chef prepackaged Indian Cuisine.  I decided to try the


Chicken Tikka Masala with Cumin-Infused Basmati Rice,


and the Chicken Curry with Seasoned Basmati Rice.

The sauces are all Authentic in seasoning, and the chicken was moist, from soaking up the seasoning.  Also, the rice was just right! I can't stand overly cooked, mooshy microwaveable rice. This rice did not do that, at all.


Here are the Tandoor Chef meals right after they come out the Microwave.  I split each in 1/2 to have a nice little buffet with the Hubby.  If you are craving something different, and don't feel like eating out, or cooking, you should really check out TANDOOR CHEF.  

Tandoor Chef makes appetizers, naan, and meals. Some are Veg, and even Gluten Free.

If your local store doesn't carry Tandoor Chef, ask at customer service can they Order it, or check Tandoor Chef out on Amazon. I wouldn't mind some boxes of Food delivered to my front door for the Holidays! I'd be beyond Thankful!

Make the Switch To JENNIE-O Oven Ready Whole Turkey , The Better Alternative for Socialites, minus the time to prepare, but still the same great moist, plump, white meat.

I am a huge fan of Jennie-O Turkey.  In my experience Jennie-O has always been delicious. The Swiss Colony 82 All-Time Favorite Things Review, and Giveaway (Retail Value $129.95.)

The Swiss Colony 82 All-Time Favorites Food Gift Box. First I'd like to point out how fast shipping was. Came the same week it was ordered.  It's an impressive 10 lb. box full of cheeses, sausages, cookies, nuts, candies and jams.  The great thing about The Swiss Colony is that you can request a free catalog to browse at home by going [here]. 


Opening the Swiss Colony package was so much fun.  It was delivered in a red, and white box with The Swiss Colony written all over it.  My husband answered the door, and started screaming The Swiss Colony package is here!! My little one helped me open the box, and remove (pop the bubble wrap.) I was excited, and curious to how exactly 10 pounds of snacks like this were mailed.  


It was a bit overwhelming seeing all the snacks in the box.  However my son had no problem jumping right in.  He went straight for the Swiss Creme Cookie, and Old World Cookies.  They had no chance to even be photographed.  He does this thing.. where he sniffs things before he puts it to his nose.. Always.. every piece of food.. I guess if it passes his sniff test, it's good enough to eat.  He's two.. I try not to over analyze the logic behind a toddler.  I just know he ate it all on the spot, and didn't run around crazy playing with it.  


I attempted to take everything out of the box, and try to organize it.  There is so much that I had a hard time taking a photo of it all in the same frame.   I just wanted to dump it out, and roll around in it while calling it my precious.

What I really liked about this box is the fact I can make separate gifts, or I can just prepare a tray for guests.


Everything in me wanted to go straight for the sweets, but I decided to try the Summer Sausage, Cheddar Cheese, and Swiss & Ham Spread.  *Crackers not Included.  There is an abundance of meat, and cheese in this package that it's smart to buy boxes of your favorite crackers.


Let me just tell you.. it filled my snack craving! Loved the combo between the sausage, and cheeses.  The meat was moist, and cheese was smooth.  Seriously, best meat, and cheese holiday box ever.

I believe there is something in this 82 All-Time Favorites Box for everyone.  

There is also mini loafs of breads, and petite fours.  Even a Chocolate Holiday Mouse.  Oh? And, can't forget the chocolate covered butter toffee.


I send my Mom & Dad packages for the Holidays.  I know they like the snack on things too.  I know kits like these are more than just a one time use gift.  The 82 All-Time Favorites Box retails for $129.95, plus shipping & handling.  Last time I mailed something out of state, it cost me over $20.00, and I'm over the hassle of going to the post office, and worrying if my package is actually going to make it there on time, or at all.  I'd rather just find a gift box, and have it mailed to them from the company now.  Saves me time, and stress.

Gorton's Wicked Good Seafood Review & Giveaway.


Everyone in my family are huge seafood fans.  Even my little one will eat it.  Recently we had the opportunity to review Gortons Seafood Products.

(I made fish sticks, popcorn shrimp, and french fries with tartar sauce.)


My Kit came with Coupons, a keychain, Fisherman shaped flash drive, recipes, and postcards.  All which came packaged in a resealable Gortons packaging. I thought that was the most coolest touch.

I went straight to my local Giant Eagles because they have the 115 resealable bags of. Gortons.  I also picked up a family size bag of Gortons Popcorn Shrimp.  I had no problems finding Gortons in the frozen seafood section.  The hard part was choosing what to try.  All the Fish Fillets looked delicious too. That is on my list to try next.



Cooking the fish sticks, and popcorn shrimp were as easy as turning on the oven, placing parchment paper on a baking sheet (I do it this way because its easier to clean up.) Then just bake for 15 minutes. I also baked fries on the same tray.


I  made tartar sauce using just mayo, sweet dill relish, and pepper.

The Gortons fishsticks and popcorn shrimp came out crispy, full of flavor, and I still have enough in the bags for more meals this week.

I am most impressed with the 115 fish stick pack that is resealable.  Its so easy to take a few out and make lunch during the day. Even better since it actually tastes great, and my picky little eater likes it too.

Pulse Roasted Chickpea Review & 4 WINNER Giveaway!

Recently I tried the Pulse Roasted Chickpeas Variety 4 pack.
Since the Chickpeas are roasted, there is this earthy, full of taste crunch to them.  They aren't hard to bite like you normally get from overly dehydrated snacks.  I really enjoyed that they were roasted instead.  All of the flavors were great, but the Spicy Lemon Zest was my absolute favorite of the Variety Pack.  I usually like spicy, or sweet (Or combined.)

Cooking with Chickpeas.

I wanted to mention that these roasted Chickpeas are great to add to rice with dried onions & dried garlics in a Rice Maker.  The rice absorbs the Roasted Chickpea taste, and becomes soft.

We add Chickpeas to just about everything.  Even Mac & Cheese to trick the little ones. Pulse left the Mac & Cheese with a delicious Sea Salt & Garlic Taste.  The Chickpeas do soften up some, I don't add them til I am putting the butter, and cheddar slices in the noodles to melt after the noodles have already been drained.

Pulse makes it more convenient to add the extra fiber, and protein to snack time, and meals.

Beehive Cheese Co. Review, Perfect Gift for that Cheese Loving Foodie.


We are a cheese loving family.  We are just starting to get back into doing "Cheese of the Week." We used to do this every week before Sy was born. We did it with Wine also.  So when I tried Beehive Cheese Co. recently, I immediately emailed the company to praise them on the quality of the cheese.  I don't think enough companies get positive feedback when deserved.

The moment I bit into the cheese, I may have started talking dirty to it.  The cheese is THAT good.  The sampler pack I received to review had four different cheeses.



Big John Cajun (Secret Cajun Recipe),Seahive (Real Seasalt & Wildflower honey), Teahive (with Black Tea & Bergamot), and Barely buzzed (Espresso, need I say more? I had tried the Barely Buzzed before, and that is what made me contact the company) are all worthy of experiencing.  Great texture on the tongue, easy to serve.  The tastes are simply amazing.

I prefer the spicy blends.  I also really like the Jams that come with some of the Gift Sets.  I've bought my hubby the set before, and that's how I found out about Beehive Cheese Co.  I like to buy him things he's never tried before, that he can eat instead of a gift that will just collect dust in the closet.  He ate the Hot Blooded Orange Jam on everything.  


Beehive Cheese Co. hand crafts their cheeses, and I can honestly say  that it is seen, and tasted in the cheese itself.  I was impressed by how fast it was shipped, and was delivered in a shipping cooler with ice.

Hoppy Easter!!

Glee Gum Do It Yourself Candy Kit Giveaway!


These kits are fun, and educational! You can see my reviews for the Do It Yourself Chocolate Kit, and the  Do It Yourself Sea Weed Gummies Kit.  I haven't tried the Do It Yourself Chewing Gum Kit yet, but I bet it's as equally great if not better than the other two. I do enjoy Glee Gum.  My favorite flavors they make are the Cinnamon, and Spearmint Not only are the kits made with natural ingredients, they also tell a history about the ingredients used.

HealthySurprise.com Monthly Subscription Box Review

Healthy Surprise boxes are All Natural, Real Foods that are Vegan, Gluten Free, and Soy free.  This box had no chance in my house.  My whole family loves snacks like this.  This is a great way to break in the new year with eating better.  There is no excuse that you have no time, or the energy to buy healthy snacks.



I am hoping you all are a lot like I am when it comes to trying different snacks.  I enjoy a variety of things.  I can't eat the same thing day in, and day out so I like to switch things up.

This is a healthy monthly Subscription box called Healthy Surprise.  It really was a great surprise.  When the box came I opened it right away, and it was packaged in layers.  The first layer (Yes it was like receiving a gift!) had fruit bars, mango fruit leather squares, some bags of different kinds of dried fruit/nut/mixes.  There really was so many items I thought wow! but I wasn't done unpacking.  I then took out the 2nd layer and unwrapped to find huge bags of chocolate granola, more nuts/fruit, freeze dried fruit, chocolate macaroons. The Kale chips were really good too. There really is so much in these boxes that you have to try it.

Every box has full size items in them!! No sample sizes, or the same boring thing.  My family loved this box.  We are going wheat free.  My son enjoys the dried fruit (being he will not eat anything that is wet, so this is how I trick him into eating his vegetables, and fruits.) My husband has been wheat free for awhile now, and he loved the nuts/fruit mixes.  His favorite was one that had sunflower seeds, and pumpkin seeds in with the dried fruit.  We also fought over the macaroons to where I went out and found them at Whole Foods.. for $7.00!! You can get this whole box delivered to you for $33/month that has 16-20 servings, enough for 1-2 people.  I think it's a great deal considering we are human, and we need to eat! I'd much rather eat foods like this.  I also like that I can try different things, and they do all the work for me finding them. If I really like something, I know what to buy when I am out, and about.

Lazy Day? Try this Pizza Alternative Recipe (Tostadas)



I wanted pizza for dinner, but I wanted something easy to make, and a better alternative too, so I made Pizza Tostadas. All you really need is cheese, sauce, tostadas, and whatever other toppings you enjoy.



Just bake them long enough to melt the cheese, I like to use a sheet of parchment paper. Makes the Tostadas nice and extra crispy.



I am human, and have my weaknesses, but if I can find something that fufills a craving I have for pizza, that is an even healthier alternative. I try to make that first. You can also use refried beans instead of pasta sauce, or just do stewed tomato's, whatever you like.



I try to make my fridge have fruits, and vegetables portioned off in their own bags, that way I can just grab a bag when I am preparing a meal. I usually buy things in bulk, either from Sams Club, or Aldi's, Those two are the cheapest places here for fresh produce. I do grow my own cherry tomatoes, pablano peppers, and mints. I have what you call an "apartment garden." Ideally I'd love a real yard.
